Honey aroma appears mostly because of early-stage fermentation on a leaves, when small insect start biting the leaves, same as it go with Oriental Beauty tea. The technological process of mixiang oolong is one of the most complex in tea production, not only on Taiwan, but worldwide. It has hand-plucking, indoor and outdoor withering, cooling down, low-speed rolling and fermenting, post-rolling fermentation, roasting and shaping, final drying (each steps of last two multiple times). Absolutely unique, adorable tea!
